We select our wood from used Oak Barrels.<\/p>\n<p>3\/4 Fill keg with clean warm water and leave overnight, in the morning drain and repeat the same process for 4-5 days, this will help extract any harsh oak tannins. (if the keg leaks it will swell up usually within 10-15 minutes)<\/p>\n<p>Then completely empty the keg and fill with Port\/Muscat or Spirits, your keg is ready to go.<\/p>\n<p>KEG TIPS<\/p>\n<p>Kegs can only be filled with a wine 16.5 per cent alcohol\u00a0&amp; above (lower than this and the wine will go off)<\/p>\n<p>For a 15 ltr keg try 12 ltrs of Tawny, 2 ltrs Muscat (sweetens) and 500ml-1ltr Brandy (adds spirit character)<\/p>\n<p>It is a must to sample your brew on a regular basis to check how it is developing<\/p>\n<p>If your tawny is left in the keg for a long time it may become flat and tired, this can be brought back to life by adding a younger tawny.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Tawny \/Fortified\/Spirit Keg Care Our Kegs have been Hand Crafted in the Traditional method passed down from\u00a0Three Generations of Coopers.
