Tawny /Fortified/Spirit Keg Care
Our Kegs have been Hand Crafted in the Traditional method passed down from Three Generations of Coopers. We select our wood from used Oak Barrels.
3/4 Fill keg with clean warm water and leave overnight, in the morning drain and repeat the same process for 4-5 days, this will help extract any harsh oak tannins. (if the keg leaks it will swell up usually within 10-15 minutes)
Then completely empty the keg and fill with Port/Muscat or Spirits, your keg is ready to go.
KEG TIPS
Kegs can only be filled with a wine 16.5 per cent alcohol & above (lower than this and the wine will go off)
For a 15 ltr keg try 12 ltrs of Tawny, 2 ltrs Muscat (sweetens) and 500ml-1ltr Brandy (adds spirit character)
It is a must to sample your brew on a regular basis to check how it is developing
If your tawny is left in the keg for a long time it may become flat and tired, this can be brought back to life by adding a younger tawny.
